Neapolitan pizza is "pizza you eat for the crust" — the dough is everything. In its home country, using anything beyond flour, water, salt, and yeast is considered a betrayal of tradition. Naturally, La Tavolozza uses only those four ingredients too. Both the flour and the salt are Italian, and the yeast is a beer yeast prized for its distinctive umami. The dough is worked to incorporate air, kneaded only just enough to avoid excess elasticity, resulting in a light finish — the kind of pizza one person can easily finish alone.
